Arugula is a somewhat bitter, but can be balanced with the lemon and sweetness of the pear. Arugula contains vitamins A and C, potassium, and folate. Folate is said to reduce homocysteine, which has been linked to cardiovascular disease.
Makes 4 servings
PREP TIME: 5 Minutes or Less
- 6 cups Arugula
- 1/2 cup blue cheese, or goat cheese
- 1 pear, sliced
- Dressing: 2 tablespoons Olive Oil with juice of 1/2 lemon OR
- Dressing: Lite Raspberry Vinaigrette
Mix the arugula with cheese and pear, dress lightly with olive oil and lemon juice OR the vinaigrette. With the olive oil and lemon juice, you can pepper to taste (and maybe a little salt).
